Matthieu Fève
Owner 🍇 🍽️
Following many years of learning and working, from the capital to Finistère, and training in sommelierie and the art of French hospitality, in multiple establishments (Les Botanistes, Le Ritz, among others)
Matthieu decides to take over this Italian restaurant opposite Parc Monceau, and transform it into a true traditional French bistro!
Following studies at the Médéric and Ferrandi Paris hotel school , he is concerned about the quality offered to our customers, both on the plate 🍽️ and in the glass 🍷.
Over the years, Matthieu has had the opportunity to work alongside many wine professionals, which allows him to offer you a superb wine list today, featuring wines from all regions and all grape varieties.

Ahmed joined the Phalsbourg adventure a few days after its opening! After working at Alain Ducasse's restaurant Le Spoon 2, Ahmed chose to join our team.
A true culinary master, he works alongside our Chef to consistently create high-quality dishes for you! A real gem who completes a dynamic duo in the kitchen! 🤩

Our Head Waiter Archibald !
After a career change to the restaurant industry, Archibald cut his teeth at the Père & Fish restaurant where he ended up managing the shop and then managing the Dada Bistrot brasserie in Courbevoie !
Archibald joins our team with the aim of providing you with a high-quality service by assisting you in choosing your plates 🍽️ but also your bottles 🍇!
